En la despensa del hospital: léxico de cocina en un inventario de beneficencia (Jaén, 1869)

Abstract

In the past few years, quite numerous are the works that have been focused on the analysis of the lexicon of different kinds of archival documents —inventory of properties, testaments, trades from notarial protocols, etc.—, especially those dated from the Spanish Golden Age (vid. Quirós 2011 and 2012; Bastardín 2012 and 2015; Carriazo 2012a and 2012b; Morala 2012 and 2015; Perdiguero 2013 and 2016, among others).
In this connection and within the framework of the Historical Corpus of Santo Reino (Corpus histórico del Santo Reino, COHSANRE) —the current research project of the group inTEXTA, from the Network CHARTA at the University of Jaén—, the present research considers an inventory dated from the 19th century, where the supplies and tools available at a hospital from Jaén are listed (Jaen’s Provincial Council Archive, Bundle 2177/45). Specifically, the document is divided in seven sections: (i) “supplies”, (ii) “fuel”, (iii) “utensils”, (iv) “pharmacy”, (v) “clothes” (vi), “kitchen tools”, (vii) “garments and jewels at the chapel”. After an approach to the religious lexicon (Torres 2015), we focus particularly on the culinary lexicon, dealing with the lexical items within the sections “supplies” and “kitchen tools”.
Our research objective is two-fold: generally, to make known unpublished archival funds related to charity —following Torres(2014a, 2015 y 2019), Vázquez (2017) and SánchezPrieto and Vázquez (2017)— and, particularly, to list the documented culinary lexicon and contrast it with the bibliographical sources of the time.
