Les confréries œnogastronomiques comme dispositifs situés et incarnés du patrimoine alimentaire

Often perceived as folkloric institutions, œnogastronomic brotherhoods nonetheless play a structuring role in contemporary food dynamics and reflections on sustainability, food relocalization, and the heritage of taste. Through their attachment to local products, their recognition rituals, and their community grounding, they contribute to a redefinition of production, consumption, and transmission circuits. This article presents an exploratory analysis of a sample of brotherhoods by identifying in their multimodal discourses the constitutive elements of local, sustainable, and territorial food. Furthermore, it will also demonstrate that they embody a socially invested place in the sense of eco-terminology, which reinforces their grounding in the face of globalized standardization dynamics.
